I love soup and I love having a few serves in the freezer for lunches.
I usually make a big batch up each week and freeze some in small serves.
Here is the one I made today….
Kale and sweet potato soup with barley.
Sweet potato diced
onion finely diced
garlic finely chopped/minced
kale chopped without stalks
chicken or vegetable stock
salt and pepper to taste
Basically you just chop everything into small cubes and place into a large pot.
cover with water/stock and cook gently for about an hour or so until the barley is cooked.
Enjoy with some crusty bread.
