My quick and easy lentil patties……

I love having a quick and easy lunch to make when we are home.  We don’t eat a lot of bread other than with soup or salad wraps,   so I make patties all the time.  I find they are quick to make, quick to eat and quick to clean up after.

This is my basic lentil recipe but you can use corn, carrot, onion or whatever you like really.

Quick and easy lentil patties…..

1 can of lentils (you could soak and cook your own if you prefer)

1 onion finely chopped

1 clove of garlic

1 egg

1 grated zucchini

about 1 cup of flour (I use spelt)

a dash of milk

salt and pepper to taste

you can add any herbs you like

palmison cheese (optional)

squirt of bbq sauce or sweet chilly sauce (optional)

Method

Mix all ingredients together in a large bowl until its like a think pancake consistency.

Heat up oil in a large fry pan and drop spoonfuls into oil.  Flatten if needed.  Fry until golden brown.

Drain on kitchen paper and serve.

I keep any left over patties in the fridge for a quick snack throughout the day.

My kids don’t stop eating so its good to have a few left over for hungry mouthes later in the day.

I usually chop up some capsicum, tomato and snow peas (or whatever is on hand) to go with the patties…..or not.  You can also serve with a dollop of plain yoghurt.

OR put them into a burger type bun and chuck in a bit of salad!   YUM!!!
