Buckwheat and coconut cream pancakes

We had pancakes this morning so I thought I would share my recipe with you.  Its pretty simple and my kids love it.  I always make lots so the kids can have them as snacks though out the day or if we are heading out we can take the extra with us for snacks.

Ingredients.

Spelt flour (or flour of your choice)

Buckwheat flour

 Baking powder

Rapadura or coconut palm sugar

1 can of coconut cream

1 egg

Extra dash of water or milk if the mixture is too thick

Method

Sift flours into a bowl and stir in the sugar.

Add 1 teaspoon of baking powder per cup of flour.

Add coconut cream and egg and mix together.

If the mixture is too thick just add a dash or 2 of water or milk.  It will be a bit stringy looking due to the buckwheat flour so don’t worry.

Heat oil for frying. I use either coconut oil or rice bran oil depending on whats around.  Fry until golden on each side.

Serve with honey and cream or what ever you like.

Buckwheat is a great source of easily digestible protein.  It is good for your digestion and if you are gluten or grain free then this is a good option.
